Ingredients

  • 8 oz. Rigatoni pasta
  • 1 lb. lean ground beef
  • 1 14.5 oz. can Italian style diced tomatoes
  • 1 small onion, diced
  • 3 cloves garlic, diced
  • 4 oz. cream cheese
  • 1/2 cup shredded swiss cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup Parmesan cheese

Instructions

  1. In large cooking pot, cook the pasta according to the package directions.
  2. Drain and set aside pasta. Reserve 1/4 cup water from the pot.
  3. In a large skillet, brown the ground beef with onions, garlic, and salt and pepper.
  4. Transfer ground beef to large cooking pot.
  5. Over medium-low heat, add pasta and cheese to ground beef and stir.
  6. Mix in diced tomatoes and reserved pot water and combine thoroughly.
  7. Continue heating for 5 minutes, stirring frequently.
