Ingredients

  • 2 medium zucchini
  • 1/2 medium tomato, seeded and chopped
  • 1/2 cup finely chopped mushrooms
  • 1/2 tsp garlic salt
  • 1/2 tsp Italian seasoning
  • 1/2 cup Parmesan cheese for filling
  • 1/4 cup Parmesan cheese for top.

Instructions

  1. Cut zucchini in half lengthwise.
  2. Scoop out seeds and set aside.
  3. Preheat oven to 400F
  4. In a small bowl, combine zucchini seeds, mushrooms, tomato, garlic salt, Italian seasoning, and 1/2 cup Parmesan cheese.
  5. Spray small casserole dish with non-stick cooking spray.
  6. Place zucchini shells in the dish and fill with mixture from bowl.
  7. Bake uncovered for 25 minutes.
  8. Remove dish and sprinkle 1/4 cup of parmesan cheese on top.
  9. Bake 5 more minutes.
