Ingredients
- 2 medium zucchini
- 1/2 medium tomato, seeded and chopped
- 1/2 cup finely chopped mushrooms
- 1/2 tsp garlic salt
- 1/2 tsp Italian seasoning
- 1/2 cup Parmesan cheese for filling
- 1/4 cup Parmesan cheese for top.
Instructions
- Cut zucchini in half lengthwise.
- Scoop out seeds and set aside.
- Preheat oven to 400F
- In a small bowl, combine zucchini seeds, mushrooms, tomato, garlic salt, Italian seasoning, and 1/2 cup Parmesan cheese.
- Spray small casserole dish with non-stick cooking spray.
- Place zucchini shells in the dish and fill with mixture from bowl.
- Bake uncovered for 25 minutes.
- Remove dish and sprinkle 1/4 cup of parmesan cheese on top.
- Bake 5 more minutes.
