Ingredients
- 16 oz linguine
- 2 large boneless skinless chicken breasts
- 1/2 cup flour
- 1 tablespoon olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 4 oz can of mushrooms
- 1 cup chicken broth
- 1 1/2 cup heavy whipping cream
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic pepper
Instructions
- Halve the chicken breast along the length.
- Season the chicken with salt and pepper and dredge in the flour.
- In a large skillet combine olive oil and 1 tablespoon of butter.
- Heat over medium-high heat until oil and butter become thin, about 3 minutes.
- Sauté chicken in skillet until exterior is golden and crispy. About 4 minutes per side.
- Reduce heat to medium-low and set chicken aside.
- Heat a large pot of water for the pasta. Add salt if desired.
- Place the remaining 2 tbs butter in skillet. Once the butter has melted add in the garlic and mushrooms and sauté for 3 minutes, stirring frequently.
- Once water is boiling, add linguine. Cook according to directions on pasta.
- Add lemon juice, garlic pepper, and chicken broth to the skillet. Deglaze the bottom of the skillet with a wooden spoon and cook for about 5 minutes.
- Stir in the heavy whipping cream and add the chicken to the skillet. Cook for 5 minutes. The sauce should thicken.
- Drain the pasta. Plate some linguine first and then add chicken and sauce on top. Enjoy!
