Ingredients

  • 2 10.5 oz Cream of Chicken Soup
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 boneless chicken breasts
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 cup shredded monterey jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 16 oz egg noodles

Instructions

  1. Cut up the chicken breasts into 1" cubes.
  2. In medium skillet, heat oil over medium-high heat.
  3. Cook chicken breast thoroughly, turning occasionally, about 6-8 minutes. Set aside.
  4. Preheat oven to 350F
  5. In a large bowl, combine soup, mayo, and lemon juice.
  6. Add chicken, onion, peppers, and 1/2 of each cheese. Combine thoroughly
  7. Add noodles and mix well.
  8. Pour mix into a greased 9"x13" baking dish.
  9. Bake uncovered 30-35 minutes.
  10. Sprinkle with remaining cheese and bake for 10 more minutes.
