Ingredients

Cake
  • 4 eggs
  • 1 1/4 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 tsp. ground nutmeg
  • 2 tsp. ground cinnamon
  • 3 cups carrots, grated
Frosting
  • 1/2 cup butter
  • 8 oz. cream cheese
  • 4 cups powdered sugar
  • 1 tsp. vanilla extract

Instructions

Cake
  1. Preheat oven to 350F.
  2. Grease and flour 9x13 inch pan.
  3. In a large bowl, beat together eggs, oil, granulated sugar, and vanilla extract.
  4. Mix in flour, baking soda, baking powder, salt, nutmeg, and cinnamon. Sir in carrots.
  5. Pour into baking dish.
  6. Bake for 40-50 minutes. Let cool in pan for 10 minutes and then transfer to a wire rack to cool.
Frosting
  1. Soften butter and cream cheese.
  2. In a medium bowl, beat butter, cream cheese, vanilla, and powdered sugar until mixture is smooth.
  3. Frost the cake once it is completely cooled.
