- 4 eggs
- 1 1/4 cup vegetable oil
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. vanilla extract
- 1/2 tsp. salt
- 1 tsp. ground nutmeg
- 2 tsp. ground cinnamon
- 3 cups carrots, grated
Frosting
- 1/2 cup butter
- 8 oz. cream cheese
- 4 cups powdered sugar
- 1 tsp. vanilla extract
Instructions
Cake
- Preheat oven to 350F.
- Grease and flour 9x13 inch pan.
- In a large bowl, beat together eggs, oil, granulated sugar, and vanilla extract.
- Mix in flour, baking soda, baking powder, salt, nutmeg, and cinnamon. Sir in carrots.
- Pour into baking dish.
- Bake for 40-50 minutes. Let cool in pan for 10 minutes and then transfer to a wire rack to cool.
Frosting
- Soften butter and cream cheese.
- In a medium bowl, beat butter, cream cheese, vanilla, and powdered sugar until mixture is smooth.
- Frost the cake once it is completely cooled.
