This hearty beef stew is a comforting and flavorful dish perfect for a cold winter night. Tender beef stew meat is simmered to perfection in a rich broth infused with rosemary, herbs de provence, and seasoned salt. Chunks of potatoes, carrots, celery, and onion add a delightful textural contrast and burst with fresh flavor. A touch of cornstarch thickens the stew for a satisfyingly hearty finish.
Ingredients
- 3 large potatoes, peeled and cubed
- 4 carrots, cut into small pieces
- 4 stalks of celery, cut into small pieces
- 1 medium onion, chopped
- 2 lbs beef stew meat
- 3 tbs vegetable oil
- 4 cups beef broth
- 1 tsp seasoned salt
- 1 tsp rosemary
- 1 tsp herbs de provence
- 1/2 tsp black pepper
- 2 tsp cornstarch
- 1 tsp flour
- 3 tsp cold water
Instructions
- If needed, trim stew meat into bite-sized pieces.
- In a large cooking pot, heat oil over medium heat until oil is hot.
- Cook stew meat until brown.
- Add in beef broth, seasoned salt, rosemary, pepper, and herbs de provence and stir.
- Continue to heat until boiling. Increase heat to medium-high if needed.
- Reduce heat to low. Cover and simmer for 1 hour.
- Add potatoes, carrots, onion, and celery and stir together.
- In a separate container, combine cornstarch, flour, and water. Stir thoroughly.
- Add cornstarch mixture into the pot and stir the stew.
- Cover and simmer for an additional hour.
